Those of you who follow my family journal blog know that we got a giant bag of oranges from our friend’s farm this week. They are so good. We’ve been eating them alone, making fresh orange juice, and I even made yet another orange pie. 🙂 Then Heather had a great idea: make Chocolate Orange Mousse! When she suggested it to me last evening, I had already been soaking some cashews all day, so it was perfect. I threw the ingredients into the blender and chilled the mousse over night. It’s so good! I hope you try it!
Dairy-free Orange Chocolate Mousse
Add to blender:
1/2 cup cashews, soaked for at least 3 hours, and rinsed
1/2 cup fresh squeezed orange juice (from about 2 oranges)
1/2 cup coconut milk
1 tsp orange zest
Puree.
Add:
1/2 cup coconut oil, liquified
1/4 cup honey
1 tbsp vanilla extract
3 tbsp cocoa powder
Puree very well. Chill at least 8 hours.
I used these small drink glasses, and it made 4 servings.

I’d like a spoonful, please!! I just made Coconut Gal’s banilla nut ice cream last night, a chocolate version. Very similar look and it was delicious. But, what a great way to use oranges, Kelly! Beautiful photos. You should submit them to tastespotting.com.

OK, I just made this last night. This morning, after the chill of 8 hours, I had one. IT WAS DELICIOUS!!! It’s my new favorite thing and just might keep me from indulging on junk. Thank you soooo much! My 3 year old daughter also LOVED it. And it was incredibly easy to make.
