Why on earth am I making ice cream in January in the state of Colorado? Because there’s no snow and it isn’t even cold! hahaha! Seriously, it’s been 60 degrees here. But actually I’d still be eating ice cream even if we had 2 feet of snow right now 🙂 It’s a bit of a passion of mine. Here’s the latest – Banana Chocolate Chip, with chocolate ganache and fresh sliced bananas. I was going for extra creamy here, and I think I got it. I’m still using the gelatin for health purposes. (It is said to be healing to the gut.) If you prefer, you could substitute with a quarter tsp or so of guar gum.

Banana Chocolate Chip Ice Cream
3 pitted dates
1/2 a banana
1/2 tbs vanilla extract
1 and 1/2 cups cashew milk (see my How to Make Cashew Milk video)
1/2 cup coconut milk
1/4 cup honey

that looks so good Kelly! My mom bought an ice cream machine by cuisine art a while ago but she took it back. It was really huge, and the directions called for massive amounts of sugar, when all we wanted to do was just use fruit like you are doing. It looks like that ice cream machine isn’t very big?? When I have some extra money, I am going to order it from amazon!

I LOVE my ice cream machine! This is the exact one I have, only mine is white. It was a gift. I would have gotten the red myself 🙂 I highly recommend it. Just be careful not to scratch the inside of the bowl getting the ice cream out. I could make up a new flavor every day 🙂

Oh my gosh, where on earth do you buy alcohol free mint extract? I want mint ice cream, i want vanilla shakes, but i cant find alcohol free extracts and i cant have gluten or have corn alcohol (well, corn)!

I made this recipe and it is pretty good! I think I will add more vanilla or vanilla beans next time. Making my own non-dairy ice cream definitely saves some money; the coconut ice cream from the store can be pricey. Thanks for the recipe! I am looking forward to trying your other ice cream recipes! 🙂

Question about adding the chocolate chips. It looks like you have pieces in the ice cream, so I’m assuming you don’t puree it so that it’s liquid. Do you know what button I should use on the blendtec? I just got my blendtec, so I’m still getting used to it. Thanks! I’m going to try it tonight.

Can I use something other than cashew milk? My son is allergic to nuts….what about adding more coconut milk??

This looks great, but how is it vegan if you are using gelatin? I am new to this, but I thought that gelatin was made from animal products. Is there a substitute that could be used?

I’d like to use this recipe to make mango “ice cream”. I’m planning on omitting the banana and cacao nibs and adding mango. Should I also omit the dates or are those just for sweetness? Thanks!
