Photo of Andy and I, by Zoe.
Last Saturday we got 4 inches of snow. The girls put on their snowsuits and gloves, pulled each other in the sled, and built a snow slide with our 9 year old neighbor, Abi. This weekend it was 80 degrees, sunny and warm. That’s the CO Front Range for you 🙂 So, yesterday, we put on some dresses and short sleeves, and went to Boulder. My friend, Stephanie, of Gluten Free By Nature, told me about this place that opened about a month ago, called, Modmarket, so we decided to go there for lunch.
Modmarket gets gluten-free pizza dough from The Gluten-free Bistro. They roll it out between plastic wrap, and bake it on parchment paper to prevent cross contamination. They even offer Haystack chevre, which is great for those of us who can tolerate goat milk, but not cow milk. And did I mention how cool this place looks? And what a great view of the snowcapped mountains it has? If you’re in Boulder, you should really check it out.

Thanks for sharing these gluten-free restaurants Kelly! I live in Denver but I’m always looking for healthy places to eat in Colorado. I’m excited to try this one and the one in Longmont where a friend of mine lives.

Hi,
I am one of the owners of The Gluten Free Bistro and I thought you might also like to know that our pizza crust contains coconut flour as well! Please visit our website for more places around Boulder and the Denver area that serve our delicious, nutritious crust. http://www.theglutenfreebistro.com

Zoe did a great job of snapping the photo! Good for her!
It seems I read recently on a blog, maybe on http://celiac-disease.com/, that the Denver/Boulder area is in the top five in the nation for gluten-free restaurants and product access. That’s wonderful!
I still feel it is ironic that I discovered my gluten intolerance after moving away from Denver and to Paris, lol. *sigh*
It really does make me want to come back to Colorado, though!
My son in Colorado said the 4″ snow was the first significant one! Oh I remember the days of growing up there and having to wear coats over our Halloween costumes as it was sleeting, or even all-out snowing. LOL.
That Modmarket Pizza looks like it rocks. Glad you had a good family outing!

Hey Kelly. Apparently Modmarket is also carrying/serving the soups of Boulder Soup Works, all of which are gluten-free, and some of which are vegan. We had the red lentil something or other over the weekend, and it was delicious.
Cheers, Pete

This is awesome! We live in Seattle and are “low gluten”, if you will, and we’re in the midst of planning a road trip between Denver and Albuquerque this June. This put Modmarket on my list for Boulder, for sure!
