I am so crazy for pumpkin and squash. The other night we had squash with baked apples, raisins, walnuts, honey, and cinnamon. It was so good I was thinking I should make it into a casserole and post it. Then, the following night, we had this, Spaghetti Squash & Cashew Milk Cream Sauce. Delish. It’s easy and fast, especially since I took a tip from Gluten Free Gidget and cooked the squash in my slow cooker with 2 cups of water. The spaghetti squash goes into the slow cooker whole, just like I bake butternut squash and pumpkin whole in my oven, without poking or cutting them at all. Simple, and quick.
For the Cashew Milk Cream Sauce
(which only tastes creamy, and not like cashews)
Make a rue
Add 4 tbs of brown rice flour to 4 tbs of coconut oil or ghee (I prefer ghee) in a pre-heated pot, and whisk.
Whisk in 2 and 1/2 cups of cashew milk, about 1/2 cup at a time, allowing it to thicken in between.
Add 1/4 tsp garlic powder, 1 tsp Herbamare seasoning, and a few cranks of ground pepper to the sauce.
Sprinkle cinnamon over top.

Mmm! Love it =D. Cashews have such a wonderful richness to them, and this looks like the perfect (not-so-typical) use for them!!

Wow! This was delicious! I used Almond milk since I did not have any soaked cashews on hand. Also, when the squash was done, I scooped it into a bowl and liberally coated it in ghee. While I made this, I told my chef husband “Honey….is it possible for you to maybe do something creative with that cooked chicken in the fridge we need to eat up”. (since I am not the creative one in the family). So he sauted it in some butter and garlic and added cilantro and lemon and green onion. YUM! It went perfectly with the squash! And we topped the meal off with a romaine lettuce salad. It was beautiful to look at and the whole menu was so delightfully delicious. My kids even ate it up! And that is saying A LOT! This menu is definitely a keeper in this family!
