Jeff at Le Peep in Longmont, has teamed up with Pamela, of Outrageous Grains (formerly titled Aunt Kay’s Gluten-free Creations), and what a treat it is. Just look at this waffle…
I can hardly explain how insanely good this waffle is. Fluffy inside, crispy outside… Completely out of this world.
My hero, the manager, Jeff and I.
The gluten-free bread at Le Peep is another favorite of ours, Udi’s Gluten-free.
The place is adorable, the food is phenomenal, the price is affordable. Can’t say enough good things about it. Cheers, Kelly

Hi Kelly,
Went to LaPeep website and it doesn’t say it’s gluten free; is it only gluten free at your location?? The website shows pics of food drenched in gravy and cheese. There are several locations close to me in Texas – but I’m afraid to try them. -Molly

I’m afraid it may be only the one in my town.

Hi Kelly!
thank you for a wonderful blog!
I make my own glutenfree waffles too – with chickpea flour, rice milk and eegs. I fry then in coconut oil and they are good. Do you know what they put in theirs?
Thanks a lot,
Sille
Kelly says
Thanks Sille! I think they use tapioca and rice flour.

A couple comments: have you tried making your own choc. chips with stevia? I made these with sucanat: http://heavenlyhomemakers.com/making-homemade-chocolate-chips-in-detail but they melted sort of weird. We are soy-free as well, so we use the same mini-chips that you do, but I’m brainstorming about making completely sugar-free cookies.
Also, do you have a standard way that you convert recipes to sugar/grain-free, or are you more of a recipe-maker-upper?
Hope you don’t mind the questions π

Thanks Knowledge Safari!
Hi Brenna! I have not made my own chocolate chips, and I don’t mind the questions at all π I have used cacao nibs before though. Also, I think some natural sugar alternatives are 1:1 ratio or close with refined sugar, like coconut sugar. I think coconut sugar is 1:1. But I usually just experiment. π I like to use a combination of stevia and honey or coconut sugar, so that I need less of the honey and coconut sugar, since they are more expensive. I’ve also been trying to use more apple sauce.

Hi Kelly! I love your blog, and share a similar life story. Son with gluten sensitivity whose diagnosis led to mine. We are dairy, gluten and sugar free, too. I was inspired to create a new website to increase awareness, http://www.foodsensitivityjournal.com. It’s just a start at this point, but I’m wondering if you would mind adding me to your links. Your link is on my blog. Thanks for all you do! Megan.

Kelly, are the waffles and pancakes at LePeep dairy free too? I am also sensitive to soy but would love a breakfast OUT!
