This may look like a moo milk latte, but it isn’t. It’s an almond latte with foam and everything. And it rocks. I don’t know if you could get the foam with a regular blender, but all you guys with a Vita-Mix or Blendtec—listen up! Here’s how you do it:
Make your coffee or even tea for a tea latte.
Next add to your blender:
3/4 cup blanched almonds
2 tbsp Hemp Seeds
water up to about the 3.5 cup line
Blend. Blend. Blend 😉
Strain into pitcher through Nut Milk Bag or cheesecloth.
Squeeze the nut milk bag or cheesecloth over the pitcher then set the almond meal aside.
(use the wet almond meal for cookies—pages 150 & 156 in my cookbook)
Add the nut milk back to the blender with about 4 pitted dates.
(Optional: soak the dates first if they are too dry)
Puree.
See that nice foam now, on the top? Oh, yea.
Pour your coffee or tea into a mug and add your nut milk on top. I like about a 1:1 ratio of coffee to nut milk/foam.

Wow that looks incredible. I love lattes! Brewing Market here in Colorado actually gives you the option to use almond milk in your chai or latte and its delicious! I’ll have to try this one!

Yet more evidence that I need a Blendtec or a Vitamix! Love that photo with you holding the latte–yum. We had almond milk hot chocolate on a girlfriend’s trip recently and it was awesome. I know this would be delightful, Kelly. 🙂

Since I had been so sick from some food that I was unaware it had milk in it, hot vegetable broth has been my best friend lately. And this latte sure looks sooooo good.

Do you spoon only the foam on top of the latte, or do you add some milk and some foam? And then you’d have extra almond milk left over, right? I am clarifying because I am sooo going to try this, and want it to be just right!!!

Kelli, I pour the nut milk in, about half coffee, half nut milk, and I add more foam with a spoon if necessary 😉 There’s lots of left over nut milk, unless you make half the recipe and share. Half the recipe would probably make about two large or four small lattes.

OK, posting for the 3rd time! The almonds should be soaked, right? Or because they are blanched they don’t need to be?
Are the dates what makes it foamy? Or is that just the sweetener?
Also, is this the first picture Zoe has on the blog? Tell her for me that she is very talented!

I think it’s the combination of dates and nuts that makes it foam, but I don’t know.

I also cannot make nut milk because I have a regular blender that just isn’t strong enough to make nut milks. But I LOVE lattes and your picture is making me crave some! If I ever get a vitamix, I’m trying this asap 🙂

Oh I’m so glad I found your blog! I have recently, well for about 4 or 5 months been sugar free in my diet and feeling much better for it. I just recently purchased a vitamix so I’m definitely going to try out this recipe! I make my own almond milk all the time so next time I do I will give it a go 🙂
