Here I am in my kitchen right now taking photos and making up recipes. It’s just so hot outside! I’ve waited five minutes, and it’s still hot 😉 So I made up another coffee drink, and I think it’s pretty sweet. My hubby came up from his office downstairs and gave it a big thumbs up too. It isn’t frozen, but the chia seeds make it nice and thick. It would also be great with a dash of cinnamon or pumpkin pie spice.
For dinner tonight we’re having coconut curry inspired by Nepal’s, based on the curry recipe in my cookbook on page 135. All I did was leave out the broth and substitute more coconut milk. I also doubled the recipe because I love the sauce so much I could just drink it 🙂

Chia Coffee
Add to blender:
4 pitted dates (soak first if they are too dry)
10 drops vanilla liquid stevia
1 cup strong chilled coffee
1 cup cashew milk
1/2 cup coconut milk
1 tbsp Chia Seeds (grind in coffee grinder or Magic Bullet first if you aren’t using a Blendtec or Vita-Mix)
Puree.
Makes two fab chia coffee drinks.

What is the benefit of adding chia? I always thought chia’s were just the “pets” that you buy for people who have everything, but so often recently I’ve read about people EATING the stuff. What is it anyway?

Oh, you’re such a tease, Kelly! 😉 That’s what you call a headless self portrait, and it’s not even Halloween yet. LOL That chia coffee looks and sounds great! There are enough other ingredients that I wouldn’t be over coffee’d. 🙂

I was just checking out the ingredients of Vanilla Cream Liquid Stevia. Do you know if it contains MSG? I have head that sometime it is included under ‘Natural Flavorings’

I have followed your blog for a long time and you are a huge inspiration!!! I have 2 of your lovely cookbooks and I have made a fair share of the recipes. Your recipes are amazing! I am wondering HOW on earth you do it all?! You are an inspiration and I am wondering if you could write a blog post about how you organize your life and all with 3 kids, cooking all the DF, GF meals a husband and homeschooling. I homeschool part time, our daughter goes to school 2 days a week. We were very strict for 3 years and then with kindergarten starting and activities and homeschooling I really fell off and the way we were eating. I have endometriosis, hypothyroid and Hashimotos. We have tried conceiving for 3 years and still have not. How do you balance everything? What is it like in the life of you for a week? Also, what type of coffee do you drink? I went off coffee for so long and got back on it and went back off but truly some days I feel like I need it… Thanks again for all that you do for so many people!!! Any tips for keeping energy levels up also? Don’t you homeschool? How do you do all the cooking when they are home all the time? What are they doing? Thanks so much!!!

Thank you so much for the compliments! My husband and I have our own businesses, and we usually work in shifts. Unfortunately, sometimes we are both working at the same time, but we try to avoid that! The kids are mainly project-based homeschooling (you can read about that by googling it), and they’re in some groups/clubs. I do a lot of no-cook meals, like just protein, veggies, fruit, nuts, olives, etc. I make them potatoes and eggs practically every day. And I do a lot of crock pot and one pot meals, and I always make enough for leftovers. Leftovers are what save me! We have pancakes pretty often, because they’re fast, and lots of smoothies. I often make jello, muffins, or no-bake cookies while they’re laying down for bed (about 8:00). If I wait until they’re done reading and completely asleep, then I’m too tired 🙂
The truth is that it’s far from easy. Being a parent is super hard no matter what. But you know, it’s so worth it 🙂
