Two weekends ago we got to meet and spend half of the day with Elana, from Elana’s Pantry. It was a blast. Elana was so fun to hang out with and really down to earthโmy kinda gal =) We got some good food at the Boulder Farmers Market, and splashed with the kids in the creek. Then we went for a walk and browsed Peppercorn. I can’t wait to see her again.
Which brings me to this recipe from Elana’s cookbook, and my giveaway of a signed copy of her cookbook, The Gluten-Free Almond Flour Cookbook.
I made Elana’s Savory Vegetable Quiche with a few minor changes. It was really awesome. There isn’t any milk/milk substitute in Elana’s recipeโonly eggs, cheese, and fillingsโso the crust stays nice and dry and flakey. So smart. Also, the sundried tomatoes, along with with the onions and garlic really give it a lot of great flavor. Lets just say there was a lot of moaning sounds while we devoured, I mean, ate this for lunch today ๐
For the crust:
Add to bowl:
1 cup almond meal flour
1/2 cup coconut flour
1/2 tsp sea salt
1 tbsp parsley, finely chopped
Combine well. Add:
1/4 cup coconut oil, liquified
1 tbsp water
Combine well.
Pour into a deep pie pan, and press into place with your hands.
Bake at 350 degrees for about 10 minutes.
Let cool.
For the filling:
Saute one small to medium sized onion, finely chopped, for about 10 minutes.
Add 1 clove of fresh garlic, minced. Saute a couple minutes more, being careful not to burn.
Steam about 2 cups of fresh broccoli, sliced into little bits, for about 5 minutes. (I like to let it finish cooking in the oven.)
Add onions, garlic and broccoli to a bowl with:
4 whisked eggs
1 cup Applegate Farms, Chicken & Maple, Breakfast Sausage*
1/4 cup finely chopped sundried tomatoes
4 oz Daiya (or other) dairy-free cheese
1/2 tsp sea salt
Combine well.
Add filling to the cooled crust.
It’s funny, because when Elana and I were browsing Peppercorn we were looking at the Pie Crust Shields and I almost bought one. However, like finding a cute top in a store and then putting it back because I can’t think when I’ll wear it, I didn’t buy the pie crust shield I saw with Elana. And of course less than two weeks later, I needed it. Boo…
So, really not wanting to take the chance of burning Elana’s lovely crust, I did this:
I cut a hole in two pieces of parchment paper, small enough to more than cover the crust, and laid them on top of the quiche. And I hoped for the best.
I baked the quiche at 350 for 30 minutes (paper shield and all), and voila! Beautiful, delicious, perfectly done quiche and crust =)
The hardest part was waiting for it to cool for half an hour, because I couldn’t wait to try it.
*I like Applegate Farms, Chicken & Maple, Breakfast Sausage because it’s gluten and casein free and it doesn’t contain MSG or nitrates. Plus the chickens are treated humanely and without antibiotics.

Funny coincidence, I JUST made Elana’s quiche this weekend. It was so good, I had to restrain myself from eating the entire thing in one sitting! I left out the sun-dried tomatoes, even though I love them, due to severe acid reflux and replaced the goat cheese with an extra egg, to keep the binding quality but eliminate any milk products. Can’t wait to try it with different veggies next time and maybe add some ground turkey to the mix.
