Recently I spied Karina’s Hot Artichoke Dip, and I immediately knew that I wanted to make it and enter Sea’s January, Adopt a Gluten-Free Blogger event. Seeing Karina’s Hot Artichoke Dip brought back wonderful memories of family get-togethers, where my mom, grandmother or aunts served hot creamy dip before dinner. I can’t remember the last time I had something like that. So I told Karina, as soon as I make my homemade yogurt again, I’m going to make this dip. And today I did π
I didn’t use the parmesan, and couldn’t get my hands on frozen artichoke hearts. But I did find canned artichoke hearts in water, rather than oil. Also, I forgot to buy slivered almonds, so I used olive oil and almond meal on top instead.
The only bad thing about it was waiting for it to cool. Hehe π Once it was cool enough, the girls and I sat around our table, well, more like leaned over the table, caveman style, devouring Karina’s dip. It is so delicious.

Kelly- I just have to tell you that I LOVE LOVE LOVE your recipes! I follow a couple of GF blogs but hands down your recipes rule our world in this family. I have used your first cookbook so much that the pages have fallen out and nearly every page has splashes of something on it. My 9 year old daughter makes many of the recipes herself! My son turned 8 last week and when I asked him what he wanted me to make for him it was your marbled bean cake and the frosting you recently posted made from raw cashews and dates! PINCH ME that these healthy, healthy recipes are so good that my kids ask for them for their treats all the time! I just ordered your new cookbook and I have a guilty concience that I did not order it from your site. I almost did and then I ended up ordering it from Amazon becuase shipping was free and so it costed less. Also, for some reason, the estimated delivery date on Amazon was sooner. I remember your announcement saying that you make almost double when I buy it from you and after I placed my order I nearly cancelled it. I have been debating on when (not if) I would treat myself to the book and when my 9 year old saw it as I was reading one of your posts she exclaimed in excitement “MOM!! You can get that for your birthday!” OK, so that darling excitement in her made me realize I could not wait another minute to get it. So, here I am telling you how much you have changed our lives and saying how sorry I am that I didn’t get it from you.
