Rich and Creamy Rice Shakes
Add to blender:
1 cup coconut milk (I always use canned)
4 pitted Medjool dates (soak first if they aren’t soft)
1/2 cup rice pudding* (if you substitute regular rice you would probably need only 1/4 cup)
6 ice cubes
Puree till creamy and smooth.
Note: If you aren’t using a Blendtec you may need more liquids.
*1 cup organic brown rice to 6 cups dairy-free milk, cooked in the crock pot until it’s very mushy.

Ah! So cute, that baby Ginger! I remember making smoothies when I was pregnant with my daughter and every time I turned on that immersion blender she’d jump and kick me! We may have to try these!

Kelly, I love that this is SO easy to make with very little ingredients. I also loved getting a peek of Ginger. 😀 Chaz jumped, too, when the blender went on. I think he was having flashbacks of our last blender. lol

The recipe looked so good, I cooked the rice pudding overnight. Today was so cold, though, I just couldn’t think of getting the ice cubes out. So I ate it warm, like porridge, with dates and coconut milk. It was very comforting. I’m keeping that as a winter recipe! Thanks. Cute Ginger. And your video was a great ad for the baby wrap.

I was thinking we might not see you for a while…and there you are! Glorious, with baby Ginger, and a delish smoothie too. Thanks for another great recipe. I tried this blending the dates and 1/4 cup cooked brown rice together first (to get it super smooth), then drizzled in the coconut milk.

Sometimes I use a can of coconut milk plus water, and sometimes just water. I do 8 hours low.

Just found your blog while searching for gluten free recipes. We are GF,SF,CF,and DF – Gluten Free, Soy Free, Sugar Free, Corn Free and Dairy Free. After years of trying to find the cause of my son’s headaches, the Lord led us to a dr who diagnosed the cause as food sensitivities.

I love that you make videos with Ginger. I think so often people think there has to be “baby only” time and then “this is all the stuff I need to get done without baby” time and then they get intimidated, especially in the kitchen. You are living proof of a happy, integrated lifestyle! I love how important family and food are to people like you (and me) in this community.

Great. My kids loved it too. We are on an elimination diet, and it was fun to get a good treat in that was low-allergen. 🙂
