I have been so eagerly awaiting this cookbook! My friends Matt and Stacy from Paleo Parents have seriously rocked their second cookbook, Beyond Bacon. They dispel myths that pork is bad for you, and show you how to find and order pastured pork, which is actually very affordable. Sustainably-raised healthy pigs are good for you and good for your wallet!
Like everyone else, I also have to say this book is incredibly beautiful. From the cover to the photography to the interior design—it’s breathtaking. I want to eat this book.
But instead I started by making Insanely Awesome Meatloaf, which lives up to its name (and is based on THIS recipe). I made a double batch so I could roll some into meatballs, which I ate with steamed zucchini noodles. The kids aren’t fans of zucchini noodles, so they had theirs with salad. My husband loved the meatloaf/meatballs so much he went back for seconds (and thirds). Beyond Bacon is a stellar cookbook.
