I used my Carrot Cake, and turned it into muffins! Zoe asked for gluten free carrot muffins for her birthday sleepover with her best friend, since carrot cake is her best friend’s favorite cake 🙂 She also asked for a vintage turquoise typewriter for her birthday. Her reaction was so great!
Gluten Free Carrot Muffins
Dry Ingredients
2/3 cup coconut flour, sifted
1/4 cup arrowroot
1 teaspoon baking soda
1 tablespoon cinnamon
¼ teaspoon allspice
Wet Ingredients
5 eggs, brought to room temperature in a bowl of hot water
3 cups shredded carrots (I do this in the food processor)
1/2 cup coconut milk (this is my favorite)
1/2 cup unsweetened applesauce or honey (I like half of each)
1/2 teaspoon vanilla liquid stevia*
1/4 teaspoon fine sea salt
*Note: If you omit the stevia, use ½ cup honey and no applesauce ¼ cup coconut oil, liquified. This may nearly double the bake time.
Add In
1 cup chopped walnuts
1 cup raisins
Directions
- Set the oven to 350°F
- In a mixing bowl, whisk the dry ingredients. In a separate mixing bowl, use an electric mixer to combine the wet ingredients, adding the melted coconut oil last.
- Add the dry ingredients to the wet ingredients, and combine them with the electric mixer. Fold in the walnuts and raisins.
- Fill mini cupcakes full of batter, and bake for about 30 minutes.
- Allow the mini cupcakes to cool completely, then spread my Coconut Buttercream on top of each.
Makes about 50.

The summer carnival.
What did you like about the carnival?
The rides were very fun, and I also like the squirt gun game, and the unicorn I won. And taking the unicorn with me on the rides.

It’s about a 10-year-old girl named Charlotte, who solves the mystery of the town’s missing dogs.

It’s inspired by Nancy Drew books.

One tiny thing. My favorite color changed.

Blue and turquoise.
Do you still want to be a chef?
Yes.
How long have you wanted to be a chef?
Since I was four.
What do you like about cooking?
It’s so fun to create recipes inside my head, and then make them, and taste them.
What’s your favorite thing to eat?
Sorbet, and bacon.

What a cool present – did she ask for that?
I have a typing instruction book from 1958. It has everything in it she needs to learn. Lots of drills, etc. I would be happy to give it to Zoe. Shoot me an email if she would like it.

Absolutely adorable interview!!! 🙂 There are programs online that teach you how to type. Keys are on a real typewriter will feel different of course, but I think it would work. I still have my manual typewriter that I got in high school and sometimes still use it! 😉 Belated happy birthday to Zoe!!
