I don’t know about you, but I don’t make dinner every night. That came out wrong đ It’s just that when I think of “dinner” I think of something that takes a while to cook, like Lasagna or even Chicken Nuggets. I only make things like that a couple times a week. The other nights we eat leftovers (I always make a double batch) or  what I consider no-cook meals. Most of my no-cook meals are salads with lots of veggies, dried fruit and nuts, and bacon or steak.
I have the same philosophy when it comes to gluten-free snacks for the kids. I make a couple big batches of snacks, then they eat them throughout the week. To give you an idea of the kind of snacks we have around I had my honey make these photomontages for you. Most of these are my recipes, but some are recipes by my friends, that my kids really like. Thank you so much for this batch of fabulous, kid-friendly recipes. I have spent a portion of my weekend getting ready for the rest of the week. Now, we will have yummy pre-prepared food to eat on the run or while we are busy homeschooling. We made the N’Oatmeal bars, salt and pepper crackers (going to try them with sunflower flour now), homemade lara bars (these are to-die for, my husband threatened to take them all to work when I wasn’t looking), and carrot muffins are in the oven. Filling my girls’ hungry bellies all week without gluten or grain is sometimes a daunting task, but not this week!!!! I can’t tell you how excited I am!

Hi, I know you use coconut milk or coconut in general as one of your main go-to ingredients hence your website’s name however, I was wondering if it’s possible to sub almond milk for coconut milk in most of your recipes as I am allergic to coconut. Any suggestions? All of your recipes sound delicious and it’s a shame I can’t try them!

Most things will work with almond milk đ It just wont be as rich.
