My easy go-to dinner is baked ravioli. Just take a good jarred organic pasta sauce, pour half on the bottom of a baking dish, put a package of fresh ravioli into the baking dish, fill the half-empty pasta jar to the 3/4 mark with water, shake, and pour over the pasta. Cover the pasta with parmigiana cheese (or not) and then cover the dish and bake at 350° for about 25 minutes. Easy and filling.

I would love to see more quick and easy recipes for vegetables and sides. It seems like vegetables are just over cooked in so many recipes. I have great raw recipes but I lack creativity in creating new vegetable side dishes for meals that keep the family interested. I had a great green bean with sliced almond recipe that I made in the oven but I’ve lost that recipe and I lose patience with the recipes that require blanching and the cooking. Give me good solid one shot and done recipes for delicious vegetables…….. Yum. I’m slowly getting people here to expect to have three vegetable side dishes at least, trying to shift the focus from meat and potatos to veggies and salads as well. Nothing good with meat and potatos mind you, but they need to eat more variety which means I need to make more…

Our easy go-to dish right now has been a whole roasted chicken in the crock pot & my kids all time fave…PaleOMG Julie Bauer’s spaghetti squash pizza pie!! It’s so good. To cut down on time though, I usually brown the meat (ground beef & sausage) w/ onions & garlic, then throw in whatever veggies I have (usually carrots & mushrooms) add the pizza sauce & the toss the cooked spaghetti squash in the pan…that way it’s one pot & we can eat it right away instead of adding the eggs & baking for an hr! I have a couple of go-to meals that I pull out when time is short. One is fish tacos. I buy frozen tilapia filets and just bake them, top with salsa, lettuce, onions and maybe guac (if I happen to have an avocado on hand) in a hard corn shell. Super fast, easy dinner. We also do baked potato or baked sweet potato bar. I cook the potatoes in the microwave and just set out toppings for everyone to make their own combination. I usually have chicken or beef, onions, spinach, tomatoes, etc. for savory potatoes, and brown sugar and marshmallows if someone prefers sweet. I have trouble being too creative because I have so many allergies, but I do the best I can with what I have. 🙂

My fave go-to dinner changes a lot because I like variety, but when I am tired or busy and not sure what to do I like to make a big meat and veggie hash basically. It’s whatever protein I have in the fridge (made one last night and it was tilapia) and I clean out my produce drawer. Last night was lots of onion and garlic and ginger, yams, red and green cabbage, kale, carrots, and maybe one or two other things – I don’t remember! One of my other fave go-to’s is your loaded spaghetti squash! So easy and yummy! 🙂
