It’s been crazy ’round hear. I’ve doing my thing with the kids, then working until midnight every night to get my new book ready to print, AND (so amazing) we sold our first batch of The Spunky Coconut Mixes!!! Eeek!!! Thank you so much for buying them! And I WILL be doing some giveaways for them (I promise!) as soon as possible, we just underestimated the cost of the ingredients and the packaging (yikes!).
There were some frequently asked questions that came up when we released the first batch of mixes for sale, that I wanted to make sure I answered (and you can also find these answers in our store):
—How many recipes does one bag of mix make?
Pizza & Bread Mix: 1 bag makes one pizza AND one loaf of bread OR two pizzas.
Pancakes & Muffins Mix: 1 bag makes two batches of pancakes or muffins.
Scones & Pie Crust: 1 bag makes two batches of scones AND one pie crust OR three pie crusts.
—What are the mix ingredients?
Coconut flour is the first ingredient in all of my mixes (of course). Making the healthiest mix possible was my first priority. BUT the mixes also had to make amazing recipes SO I combined coconut flour with other ingredients, like…

And now, on to the soup! One out of three of my kids ate this soup, so we can give it at 1 out of 3 stars on the kids rating system. However, Andy and I loved it so much, it was WAY off the charts for us. Ya know, cuz we’re not children. 🙂 So make it for you and your sweetie pie and maybe one of your kids will like it too.
Easy Tortilla-less Soup
2 tablespoons coconut oil
1 heaping cup chopped carrots (I used yellow carrots)
1 heaping cup red bell pepper
1 cup sliced yellow onion
salt, to season the veggies
2 cloves garlic, minced
14 oz fire roasted tomatoes
7 oz tomato paste
4 cups chicken broth
1 cup salsa (I use the organic medium heat salsa from Costco)
1 teaspoon cumin
1/2 teaspoon fine sea salt
1/2 teaspoon chili powder
1/4 teaspoon chipotle powder
1 pound cooked chicken, shredded
thin sliced jicama and/or Jackson’s Honest Chips
cilantro, to garnish
- Set a large heavy-bottomed pot over low to medium heat. Add the oil then the carrots, red bell pepper, and onion, and season with a pinch of salt. Cook for about 20 minutes. Add the garlic, then cook for about 5 minutes longer.
- Add the rest of the ingredients except for the jicama and/or chips and cilantro and bring to a simmer. Turn off the heat and serve. Top with thin sliced jicama and/or chips and garnish with fresh cilantro. Enjoy!
