We’ve been having snow envy so we took the kids up near Big Bear to play 🙂 I want to go again soon. Crazy that we can drive to snow in one direction and the beach in the other.
Driving back down the mountain we saw the most stunning sunset I’ve EVER seen in my whole life. The snowy mountains looked like they were floating in the clouds. I felt so grateful to be alive.
Back down on the ground again: I’ve been obsessed with the idea of 3 ingredient recipes. I have another one I’m testing tomorrow, hoping it can be a series.
Have you ever eaten FRESH coconut meat and coconut water?! It’s amaaaaaaazing. It tastes nothing like packaged coconut milk. My kids literally jump up and down when they see me bring fresh young coconuts home from the grocery store. I wanted that fresh coconut flavor to last longer (we usually drink then gobble it up in 10 seconds flat) so I decided to make some 3 Ingredient Coconut Chia Pudding. I only used the meat from one coconut, so the pudding was more like a smoothie bowl, not thick* —If you double the coconut meat it should be thicker for you 🙂
3 Ingredient Coconut Chia Pudding
For 3 servings:
water from one coconut, about 1 & 1/2 cups
meat from one coconut, about 110g (see notes above*)
4 tablespoons chia seeds
4 large soft pitted Medjool dates
- Buy a Coco Jack to open the coconut (Use my coupon code spunkycoco to get 10% off and watch a video of Zoe using our Coco Jack) OR see my tutorial on how to safely open a coconut using a chef’s knife.
- In the blender, puree the coconut water, meat, and dates until completely smooth. Add the chia seeds and pulse to combine. Divide evenly between small mason jars. Add lids and refrigerate overnight. Enjoy!
