You guys, I don’t mean to be all dramatic, but meal planning seriously changed my life. I remember back in the day, people would say meal planning saved money, and I was like, noooooo. How can that be? But it dooooooes. For reals. I have CUT my weekly grocery budget at LEAST in half. And if that wasn’t enough reason to do it, there’s mooooore. Do you grocery shop 2 or even 3 times a week? I did. Do you ever stress over what to make for dinner? I’ve been there. When you meal plan you’re making shopping and cooking a part of your schedule. It sounds too simple to be awesome, but it really is.
Every Sunday I plan my meals for the week. I don’t like to cook every day so I plan double batches of breakfast and dinner recipes. I make sure that I get some bone-in chicken, because my slow cooked chicken (in Easy Paleo Meals) is a crowd pleaser, takes no time to make, and the bones get turned into broth overnight. Then I use the broth for a double batch of soup. That’s 3 dinners for 5 people right there, just with that one whole chicken or 8 chicken thighs. You can see how easy it can be 🙂 I shop ONCE a week and I know what’s for dinner EVERY night. It feels ah-mazing. I’m so much happier now.

As I mentioned in my last post, I’ve been working on another 3 ingredient recipe for you, and I’m thrilled with how this 3 Ingredient Easy Dairy-Free Chocolate Pudding came out! Enjoy!
3 Ingredients Easy Dairy-Free Chocolate Pudding
(make sure you read the directions to plan ahead for this recipe)
2 ripe avocados, refrigerated (about 14 oz of whole avocados)
1/2 cup packed pitted Medjool dates
1/3 cup cocoa powder
- Add the dates and 1 cup of water to a mason jar with a lid and refrigerate for 24 hours.
- Strain the dates from the water but RESERVE the date water to use in the recipe.
- Add the dates to the food processor, fitted with the S blade.
- Cut open the avocados, remove the pits, and scoop out the filling. Add the avocado and the cocoa powder to the food processor and puree until completely smooth, about 3 minutes.
- Lastly, add the date water, and 1/8 teaspoon sea salt. Puree.
- Enjoy right away or refrigerate for later.
Serves 3

Hello ! I made this recipe for the first time a few months ago. Even those that aren’t so fond of coconut love this chocolate pudding recipe! It was so delicious and yummy as well.I will try this soon once more. Thank you so much for sharing this recipe.

SO excited to try this! I’m doing an elimination diet right now to figure out some of my food sensitivities, and these are 3 foods I’m allowed! I’ve followed your recipes for a while (with the hunch I’m gluten and dairy intolerant) but now that I’m finding out for sure, I’m sure your recipes will be a necessity. I’m new to the avocado bandwagon (just never liked the flavor or the texture, but have recently attempted to consume them due to the healthy fat content) and I was hesitant to try this recipe when I first saw it. I am happy to say that I have finally given avocados a chance and made this pudding today. Yum! Of course, I can’t just follow the recipe, so I added some hemp powder (for protein) and peanut butter to make it a chocolate-peanut butter pudding. I love that combo and I found that adding the peanut butter masked the avocado and hemp taste lol. Love your blog and Easy Paleo Meals. Thank you so much for doing what you do! It has really helped me in my transition to Paleo as I go through my quest for digestive health.
