“How do you work with all your kids homeschooling?” is a question I’ve been asked since the beginning of this blog 8 years ago. At least I think it’s 8 years. I’ve lost track. Ha! Anyway, I never really knew how to answer that question. Whether you send your kids to school or homeschool, it can get crazy, right? All the studying, sports, dance classes, music classes, playdates. I’ve always tried to keep it to a minimum. I love taking long walks, lounging in bed with the kids, cooking a lot. And of course fitting spunky work into every nook and cranny of time I can find. Fortunately for me, recipe testing has always been a part of our life.
Did you ever feel like your routine was going to be your routine forever? I did. But as years went by I got tired of testing new recipes all the time, and anyway I didn’t need to anymore, because I already had spunky versions of everything my little heart desired. Also the kids got older, and became more involved in part-time schools. This week Ginger got accepted to a part-time Montessori school for the fall, and we decided to try public school for Ashley, since the middle school has a great special needs classroom for kids that qualify as severe, which she does.
The thought of Ashley being gone for so many hours a day puts a giant lump in my throat. Ugh. But I don’t want my selfish reasons to keep her from trying something that she wants to try. And I keep telling myself that we can always change our mind if it doesn’t work for her. Right? Right 🙂
And speaking of Ashley, tomorrow night I’m contributing to her special needs therapeutic riding program, GAIT (Green Acres Interactive Therapy). They’re having a fundraiser and dinner at a vineyard in Temecula. My gift basket for the auction includes signed copies of all my books and 4 bags of my mixes. I’m really looking forward to the event! I love a good excuse for having some wine 🙂 If you’re in SoCal reserve your spot now and I’ll see you there!

I could NOT stop eating this Chipotle Lime Roasted Broccoli & Cauliflower!!! Seriously, I was having trouble sharing. They were like veggie french fries. You know what makes french fries so irresistible? Fat, salt, and crunch. That’s what makes these so irresistible too, the broccoli especially. And since this is avocado oil, a super-healthy good-for-you fat, there’s nothing to feel guilty about here!!! To hear me rant about the benefits of avocado oil, read HERE.

Chipotle Lime Roasted Broccoli & Cauliflower
1 head fresh broccoli
1 head fresh caulilower
1/2 cup Chipotle Lime Mayo
1/4 cup avocado oil
1/2 teaspoon fine sea salt
- Set the oven to 400F and line a baking sheet with unbleached parchment paper. Set aside.
- Cut the broccoli and cauliflower into large pieces.
- Mix the Chipotle Lime Mayo, avocado oil, and fine sea salt in a mixing bowl, then use a silicone basting brush to apply the mixture to the tops of each piece. Place the cauliflower top side DOWN, and the broccoli top side UP.
- Bake for 10 minutes, then remove the sheet from the oven and flip the broccoli top side down as well. (You can put the broccoli top side down from the beginning, but it browns much faster, and it may burn.)
- Bake for another 20 minutes, for a total bake time of half an hour.
- Garnish with radishes and grape tomatoes if desired and enjoy!

Oooh, this sounds like a great way to have broccoli! It can be hard to get myself to eat it sometimes, let alone any little ones, lol!

what could you use instead of the mayo? I cant get the primal foods delivered. What could replace it?

Well, I’ve seen recipes for Paleo mayo, or you could find the healthiest mayo at your local grocery store 🙂
