I am beyond excited to be partnering with my favorite dairy-free yogurt company, COYO! I first tried COYO coconut yogurt at ExpoWest a little over a year ago, and I was in love. COYO is made of coconut cream WITHOUT added sugar. It comes in plain and fruit sweetened only. Do you know how rare that is in the dairy-free yogurt scene?! It’s completely unheard of. And COYO is delicious!! It’s delicious because it’s full of super-good-for-you coconut fat. You guys, I have been loving COYO for over a year, and I am so excited to now promote them. I have to turn down partnerships on a daily basis (because I can’t stand behind their product), so when COYO approached me I was jumping up and down with excitement at this 100% absolute Y E S ! ! !

What you should do is find a store near you that sells COYO coconut yogurt, and if there isn’t one, then I would ask your store manager to carry it. If enough people ask for something, they will try to get it in the store.
So here are two really pretty smoothie bowls that use COYO! They are so fun to make: just ask my teenager, she makes them on the regular now 🙂 And they’re even more fun to eat! Tart, fruity, crunchy, smooth, they’ve got it all! Both are yummy, but the Turmeric Ginger Pistachio is my favorite!
Turmeric Ginger Pistachio Bowl
1/2 cup mango COYO coconut yogurt
1/2 teaspoon turmeric
1 teaspoon fresh minced ginger
1 handful (about a heaping 1/2 cup) frozen mango
6 ice cubes
2 tablespoon protein powder (I use collagen)
to top:
1/2 banana, sliced
handful chopped pistachios
spoonful melted cashew butter
sprinkle turmeric
- Add the smoothie ingredients to the blender and puree until smooth.
- Transfer to a bowl and add the toppings.
- Enjoy!
Serves 1
Chocolate Berry Smoothie Bowl
1/2 cup chocolate COYO coconut yogurt
1 tablespoon cacao powder
1 handful (about a heaping 1/2 cup) frozen strawberries
6 ice cubes
2 tablespoon protein powder (I use collagen)
1 to 2 tablespoons water, as needed
to top:
2 strawberries, sliced
2 tablespoons blueberries (I used frozen)
1/2 kiwi, sliced
cacao nibs (pictured) or chocolate chips
spoonful melted cashew butter
- Add the smoothie ingredients to the blender and puree until smooth. Add 1 to 2 tablespoons water, as needed to get it going.
- Transfer to a bowl and add the toppings.
- Enjoy!
