I am swoooooning over this brand new copper Vitamix in my newly renovated kitchen!! Gorgeous! It also fits nicely under my upper cabinets that we chalk painted white on the other side of the kitchen.
The first thing I did when I got this pretty and very powerful Vitamix was make some healthy dairy-free Shamrock Shakes for St. Patrick’s Day. This ice cream is SO good, and the best part is that with the tiniest bit of planning ahead (freezing the coconut milk cubes), it can be ready in 2 minutes! And I know what you’re thinking: “My kids won’t eat ice cream that’s colored with spinach.” Shhh…. Don’t tell them. I’ve been making this super healthy ice cream for years, and they never suspect a thing!! You really can’t taste the spinach at all, and look at that fantastic green color π
Healthy St. Patrick’s Day Shamrock Shake
dairy-free, paleo
24 cubes frozen full-fat canned coconut milk (that’s one can worth)
3/4 cup water
4 soft pitted Medjool dates
2 tablespoons collagen peptides
1 teaspoon vanilla extract
1/2 teaspoon mint extract
small handful fresh spinach
- Add all of the ingredients to the Vitamix in the order listed.
- Slowly increase to Variable 10, using the tamper to press the ingredients into the blades.
- Puree just until smooth and serve.
Makes 2

*A note to your readers: While beef gelatin is very healthy, it is not a COMPLETE protein.
If you wish for this shake to have a complete protein, you could replace the gelatin with whey isolate (or use both – even better!)

In replacement of protein powder I use Liquid egg whites which you can also buy as I’m not brilliant with Whey that is found in most protein powders
