PUMPKIN SPICE Maple Glazed Donuts!!! Say whaaaaatt?! These are SO good, and SUPER fast to make! You know how burned out I am on cooking, so if I’m making them, then you know they must be fast! 😂
Yesterday was delightful. In the afternoon some of our best friends came over. Ginger and my friend’s daughter played in the playhouse while my friend and I sipped a glass of sensational red wine on my new master bedroom deck furniture, and caught up. She is a rockstar kind of human, and such a love. There were some much needed belly laughs. As it is with such friends, the time flew by, and before we knew it, we had to go downstairs and feed the kiddos.
I had made up a HUGE batch of my Paleo Pumpkin Chili in the Instant Pot (so I would have lots of leftovers) and Baja Drumsticks (and wings) from Easy Paleo Meals, and my friend brought Japanese Sweet Potatoes. We just put everything on the table, family style. She suggested having a bite of sweet potato with a bite of the chili, and it was so good that I finished eating it that way!
Afterwards we quickly cleaned up and raced over to Wickerd Farms for a magical pumpkin-filled time under the stars and the ancient oak trees. The branches of these trees are as thick as the trunks of most tress! And they’re lit up with patio lights for the most enchanting pumpkin picking you can imagine. The kids enjoyed the swings hanging under the canopy of the oaks, while the grownups pushed them. Really it’s the closest you’ll ever get to Lothlorian. 😉
I spent most of this morning reading with my littles. We’re loving Ranger Rick Magazine for science and social studies, The Magician’s Nephew for literature, and My Very First Mother Goose for learning to read (I followed THIS reading philosophy for Zoe, and now many years later, for Ginger).
Now, while Ginger plays with legos, Ashley is hanging with me while I make these easy Pumpkin Spice Maple Glazed Donuts. Since the I already had the recipe for the donut base, all I had to do was whip up the Pumpkin Spice Maple Glaze. I can’t wait for you to make these quick fall donuts! I know you’re going to love them!
Pumpkin Spice Maple Glazed Donuts
paleo, gluten-free, grain-free, dairy-free
Vanilla Donuts
2 eggs
1 cup almond butter
1/4 cup honey
1/4 teaspoon vanilla stevia
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3 tablespoons coconut flour
3/4 cup to 1 cup coconut milk, as needed
Pumpkin Spice Maple Glaze
3/4 cup maple syrup powder (any powdered sugar will work, but this is for a maple flavor)
1.5 teaspoons pumpkin pie spice
1/8 teaspoon sea salt (trust me, they’re better with it!)
2 to 3 teaspoons (as needed) coconut milk or other milk
Directions
- Set the oven to 350F. Add all ingredients to a blender. Note: the amount of milk you need depends on how thick your almond butter is. You want the batter to be fairly thick – so that it’s slow to pour. Add the milk gradually. You can always add more, but you can’t take it out! Puree the batter.
- Grease each of your pan’s 12 donut wells with oil (I use solidified coconut oil). You really need the oil even with the non-stick pan.
- Pour the batter evenly between the 12 wells, to almost full.
- Bake for about 12 minutes. They will continue cooking slightly as they cool in the pan. Cool the donuts in the pan for at least 20 minutes. Run a spoon around the outside of each donut to loosen them, before carefully taking them out.
- Mix the glaze in a bowl. Dip or spoon the glaze over the donuts and enjoy!
This glaze will dry to the touch after 30 minutes or so. Save leftover donuts (as if there will be any 😉 ) in the cabinet, lightly covered with a clean napkin for an additional day.
Makes 12 to 14 donuts
