I also wanted these to be slightly sweeter than the original recipe. So I made some tweaks and they grew in the oven and came out better than ever! Here is the before so you can see how much they blossomed 🙂

You’re going to LOVE these new and improved Cinnamon Rolls!
Epic Paleo Cinnamon Rolls
grain-free, dairy-free, soy-free, nut-free, egg-free
Dry Ingredients:
1 cup coconut flour
1 cup arrowroot flour
2 tablespoons psyllium husk POWDER
2 teaspoons baking soda
Wet Ingredients:
1 & 1/4 cup water
2 tablespoons apple cider vinegar
1/2 cup honey
1/2 cup melted coconut oil
1/4 teaspoon vanilla liquid stevia
Filling Ingredients:
1/2 cup melted coconut butter
1 tablespoon cinnamon
1/2 cup coconut sugar or maple sugar powder
optional: sprinkle with chopped walnuts (omit for nut free)
- Set the oven to 350 F.
- Combine the dry ingredients with a whisk. (Don’t skip this step! The psyllium powder will clump together if not properly combined with the flours before adding the wet ingredients.)
- In a separate bowl combine the wet ingredients.
- Add the dry ingredients to the wet and mix with an electric mixer.
- Press the dough together, then lay it on parchment paper. Add another piece of parchment over top and roll the dough between the sheets to create rectangle 1/4 to 1/2 inch thick.
- Mix together the cinnamon and sugar in a small dish, then spread across the dough. Drizzle the melted coconut butter over top.
- Roll the dough fairly tightly, then slice into 8 rolls. (For perfect rolls: cut the dough in the middle, then cut each half in half, and finally cut each quarter in half.) Arrange the rolls in a lightly greased dish.
- Bake for about 30 minutes, or until the tops are golden, then allow to cool to room temperature. Resist the urge to overbake. The dough will not seem set until the rolls have cooled.
- Top with glaze.*
*Note: this is not a sugar glaze, so it won’t be dry to the touch. For sugar glaze see HERE and omit the spice.
Coconut Butter Glaze
1/4 cup melted coconut cream concentrate (also called coconut butter or coconut manna)
2 tablespoons honey
1 teaspoon vanilla extract
about 6 tablespoon water, as needed to thin
