ROCKET POPS!!!! These are the kids’ new favorite. I’m beginning to think they will eat anything I freeze in them. These are Carrot Orange, and Green Lemonade. Since taking this photo last week I’ve made them two more times! They love them!

And I have 45 new recipes for ice pops, thanks to my friend Leanne and her eBook, Purely Pops! This eBook is awesome, like everything Leanne does. First is the chapter for Ice Cream Pops, including Chocolate Dip, Key Lime Pie, and Strawberry Swirl. Next are Veggie Pops, which is where I got these yummy Carrot Orange Ice Pops pictured in both photos with the girls. This chapter also includes Cool Cucumber, and OJ Lean and Green Ice Pops. Yum!
Like my ice cream book, Leanne did a Coffee & Tea chapter, with some really creative flavors all her own. These pops include Green Lemonade, Honeydew Buzz, and Maple Latte Ice Pops. The final chapter is Fruit Pops. From this chapter Mango Chili, Plum Sorbetto, and Sour Apple Ice Pops are on my To-Make list.
To make the rocket pops in the top photo I filled the molds half way with Carrot Orange Ice Pops. I modified the recipe slightly by using only a pinch of turmeric, and substituting a pinch of ground cinnamon for the cayenne. I put them in the freezer while I made Green Lemonade.
I added the green lemonade as soon as it was made. The Carrot Orange layer was still soft, giving me this nice mixed effect. And here is how I make Green Lemonade, which I learned from Natalia Rose’s The Raw Food Detox Diet many years ago.
Green Lemonade ice pops
Juice:
1 large or 2 small red apples
1 head of romaine lettuce
2 kale leaves
1 peeled lemon
1/4 to 1/2 inch fresh ginger
pinch of sea salt
I love that my kids’ treats are so nutrient-dense, beautiful and delicious. I love that these pops are made with only REAL FOOD. Whether it’s natural food coloring for frosting, ice cream, or pops, everything they eat can be healthy, and that makes me very happy!
