I have a thing for small spaces. Now, I know what you’re thinking: sour grapes. But that’s not it. Honestly. In fact, I had a really big house once, and it wasn’t for me. I have a thing for small spaces. Cottages, ranches, historic houses (the small ones). And then there’s the on-going debate over traveling for a year in an RV. Talk about a small space.
So the house we live in now is a small ranch, and we ADORE it. The eat-in kitchen is actually very generous, considering how small the living area is, which works well for us. If I were not a food photographer there would be more than enough cabinet space. I love my kitchen. I feel really grateful that we found this place.
The only available wall space was in our bedroom. We don’t need a dresser since the closet is big enough for all of our clothes. That’s why I’ve been searching for food photography prop storage to put in the bedroom. After a few failed Craigslist attempts Ashley and I went to the antique store yesterday. And I’m so glad we did! We found a tall distressed Robins egg blue dresser for a decent price. My heart skipped a beat. After giving it a good vacuum we put it on the wall across from our bed and Ginger helped me fill it with props.
I’m looking forward to putting a succulent on top and hanging something on the wall behind the dresser. But today the kids and I are too tired to do any shopping. We spent the morning having these Salted Caramel Protein Shakes, reading books, and watching a DVD about the history of chocolate. Next there will be more reading, writing, some crafting no doubt, and then an easy lunch: Cappello’s gnocci and salad. I love days like this.
Salted Caramel Protein Shakes
dairy-free, refined sugar-free
1 and 3/4 cups water
1/4 cup almond butter (I prefer raw)
2 big pinches fine pink salt
1 tablespoon cocoa powder
3 tablespoons THIS gut-healing gelatin protein
4 soft pitted Medjool dates
12 cubes frozen coconut milk (I use this BPA-free freezer tray)
1. Add all of the ingredients to a high-powered blender.
2. Puree until completely smooth.
Makes 3 shakes.

Kelly, My family of 6 lived in our motorhome by the beach in Florida for a year. We homeschool so we spent nearly every day at the beach or pool. We didn’t miss all of our stuff. It was a great experience we won’t forget!

Which gelatin is better for relieving constipation – the one in the green canister or the one in the orange canister or are they both good?
Margo says
I can’t wait to try this! One question: about how much coconut milk did you use? I know it says twelve cubes, but I’m not sure how big your ice cube tray is. Plus, I don’t have an ice cube tray, so I’m trying to think of an alternative, maybe using my muffin tin. Thanks!!
Kelly says
It’s about 1 and 1/2 cups of frozen coconut milk 🙂

Hello? Which gelatin (orange canister or green) helps with constipation?
I consume about 4T a day of the orange canister…
Kelly says
I’ve read that the green one helps increase stomach acid or something to help with digestion / constipation. It has helped us.

Hello Kelly,
I really enjoy your website, it is very refreshing.
Do you recommend a gelatin in place of this beef gelatin? I can not have beef.
Thanks!
Lord bless you!
Kelly says
Yes, I think Great Lakes has one that isn’t beef, or any protein you use is fine 🙂
